Kinunot na Pating
Kinunot na pating, Bicol’s delicacy…Kinunot na Pating or in short the Nagueños (those living in Naga City) call it kinunot is a Bicolano delicacy with the usual coconut milk cooked with it just like the popular Laing of Bicolanos. It’s main ingredient pating (shark) or pagi (sting-ray) with thekalunggay (malunggay leaves) and the fiery hot siling labuyo sliced into pieces make it really awesomely delicious.
The word kinunot comes from the word kunot which literally means shredded or to shred. This Bicolano delicacy can already be considered as an exotic food since it’s seldom or you can’t find this anywhere else except in Bicol Region. Oh by the way, the baby shark or sting-ray cooked in this delicacy are not those considered as endangered species. Although honestly speaking, this delicacy is not usually cooked everyday as sharks and sting-rays are expensive and not the usual catch of local fishermen in the region.
