Log-log Kinalas, savoury treat…Log-log kinalas is one of Bicol’s famous delicacies. It is famous usually in Naga City and neighbouring towns of Camarines Sur. Log-l0g kinalas is a local name and literally describes what the main ingredient is all about.
Log-log kinalas basically is a noodle soup which is cooked in Bicolano style. The meat toppings usually pork meat are made by boiling pig’s head. Boiling makes the pork meat tenderised enough for it to detach from the bone, hence, the word kinalas. The secret of its savoury flavour is the browny sauce which is basically a sautéd Bicolano spices. Log-log kinalas is perfectly served with boiled egg, sprinkled with toasted garlic making the soup more delectable. You can’t actually resist the taste of log-log kinalas even in a hot sunny day. You’ll surely perspire when you add to it a drop of home-made fiery chilli sauce. Then, it eventually turns to be a food made in heaven when Nagueños (Naga City residents) usually pair log-log kinalas with baduya (fried banana) or toasted siopao with a cold soft drink.
Log-log Kinalas is served mostly by small eatery. Some of these eateries are home based. One famous eatery serving this delicacy can be found at Dayandang, Naga City. Usually the customers would line up ignoring the heat of the afternoon. Although popular, this delicacy is only served by few. Some in downtown Naga and and some located along Peñafrancia avenue.
Returning Bicolanos can’t wait to treat themselves with Log-log Kinalas when they go back to their home town specially those in Naga City and neighbouring towns. Those living in Metro Manila will definitely find their way to a restaurant in Manila serving the same delicacy.
